Austrian Potato Salad Ingredients
- 3 pounds of fingerling potatoes
- 1 sweet onion, chopped
- 2 cups of beef broth
- 2 cups of chicken broth
- 2 tablespoons of white wine vinegar
- 4 tablespoons of oil
- salt and pepper (to taste)
- pinch of sugar (or to taste)
Austrian Potato Salad Instructions
Place potatoes in a large saucepan and cover them with the beef and
chicken broth Bring to a boil, reduce the heat, and simmer
until the potatoes are tender (15 minutes at the most).
Remove the potatoes from the cooking liquid (save the
liquid). Mix together the chopped onion, the oil, the vinegar,f
and 1/2 cup of the cooking broth and warm that mixture. Add
the salt, pepper, and pinch of sugar to the broth mixture.
While the potatoes are still warm, cut the into coin shaped slies
about 1/4 inch thick. Toss the warm potatoes in the broth dressing
and let them marinate for at least one hour. Top with
fresh, chopped parsley and serve.
