This traditional Russian recipe for Beef Stroganoff
is made with an expensive cut of beef, mushrooms,
sliced onions, mustard, sour cream, and
a little sugar, salt, and black pepper.
Beef Stroganoff Ingredients
- 1 tablespoon of powdered mustard
- 1 tablespoon of sugar
- 1 or 2 teaspoons of salt
- 5 tablespoons of vegetable oil
- 4 cups of thinly sliced onions
- 1 pound of fresh mushrooms, thinly sliced
- 2 pounds beef filet with fat trimmed off
- 1 pint of sour cream
Beef Stroganoff Instructions
Combine the mustard, 1-1/2 teaspoons of the sugar,
and a pinch of salt with enough hot water to make
a thick paste. Let the mustard mixture sit at
room temperature for about 15 minutes. Cook the
mushrooms and onions in two tablespoons of the oil
about 20 or 30 minutes, or until the onions are
soft. Drain them, discard the liquid, return them
to the skillet, and set aside. Slice the beef into strips. Heat two tablespoons
of oil in a fresh skillet until it is very hot but not smoking.
Drop in half the meat and fry it for about 2 minutes,
stirring constantly. Move that meat to the skillet
with the vegetables, and fry the second half of the meat
the same as the first half. After all the meat has
been transferred to the skillet with the vegetables,
add the mustard mixture and the remaining salt and
pepper to the meat and vegetables. Stir in the
sour cream, one tablespoon at a time, then add the
remaining 1/2 teaspoon of sugar. Cook over low
heat two or three minutes, or until the sauce
is thoroughly heated. Serve with Russian straw
potatoes or noodles.
