Flemish beef stew known as Carbonnade a la Flamande that
is flavored with beer, spices,
and a little brown sugar.
Carbonnade Flamande Ingredients
- 1 pound of cubed stewing beef
- Oil for browning the beef
- 2 slices of bacon, chopped
- 3 or 4 onions, sliced
- 1/2 tablespoon of brown sugar
- 1/2 tablespoon of flour
- 1 bottle of beer (preferably Belgian ale)
- 2 cups of strong beef broth
- 2 bay leaves
- Pinch of thyme (fresh or dried)
- Pinch of allspice
- Salt and pepper (to taste)
- handful parsley, chopped
- 1 or 2 tablespoons of mustard (to taste)
Carbonnade Flamande Instructions
Sprinkle the beef with salt and pepper and
brown it on all sides in the oil. Remove the meat
from the pan and set it aside. Add a little of the
beef broth to the drippings and scrape the dripping
from the bottom of the pan. Pour the broth and
drippings over the meat. Fry the chopped bacon
until browned, and add the bacon to the beef.
Brown the onions in the bacon fat and stir the flour
into the browned onions. Add the meat and bacon
to the browned onions, and pour in the bottle of beer.
Add enough beef broth to cover the meat, then add
the bay leaves, thyme, and allspice. Add salt and
pepper to taste. Bring the mixture to aboil then
lower the heat and simmer it, covered, about two
hours, stirring occasionally to keep it from sticking.
alternatively, the beef mixture can be baked in the oven until
it is tender. When the meat is very tender, stir in
the parsley and mustard and serve.
