WARNING: If you will be cooking this roast in a glass or ceramic dish, brown the roast on a metal cooking sheet before3 placing it in the glass dish. I once had a Pyrex dish shatter because the sauce I poured over the browned roast was too cool for the baking dish I had just removed from the oven.
VARIATION: Some cooks prefer to cook the mushrooms separately from the pot roast and add them to the sauce after the roast is fully cooked, rather then cooking them for two or three hours along with the roast.
